Praline coated almonds. The greedy healthy eating
The praline coated almonds are a typical dessert of Puglia and in general of the whole of Southern Italy. The peculiarity of this product is their unmistakable aroma and flavor: once bitten into the sugar, it gives way to the aroma of the almond. To make them, just a few simple ingredients are enough: water, sugar and of course almonds … the best! These sweets are in fact made by us in Arcadia with the best almonds harvested from our almond groves. Once the almonds have been selected, they are then stripped of their shells and “cooked” over a very low heat and constantly stirred with water and sugar, just as tradition dictates. Only experience will tell you when you have reached the right degree of crunchiness!
In the past it was customary for them to be at home, now they are a little less common, to be tasted after coffee. These crunchy pralines are also known as “addormentasuocere” because they were brought as a gift to the girlfriend’s house to distract the mother. Given the goodness of the gift, in fact, the mothers-in-law were busy eating them one after the other, thus keeping busy.
